bbq Pizza with quinoa Crust

A healthy spin on a classic recipe, this vegan BBQ pizza recipe is super easy to make and packed with nutritious ingredients. It's gluten-free and made on our quinoa pizza crust as well!

Ingredients 

       For the crust:

  • 3/4 cup quinoa covered by 3cm of water and soaked for 6 - 8 hours (or overnight)
  • 1/4 cup water
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

 

      For the sauce

  • 1/2 cup BBQ sauce divided
  • 1 small shallot sliced
  • 1/2 container cherry tomatoes sliced or quartered
  • 1/2 cup cooked chickpeas
  • yeast + fresh basil to garnish optional

Instructions

  1. Preheat the oven to 220ºF and line a baking sheet with parchment paper.
  2. Prepare the pizza batter, then pour it onto the baking sheet. Using a spatula, spread the batter into a large rectangle, about 12" x 6".
  3. Bake the crust for 10 minutes, then remove, flil and bake for another 5.
  4. While the crust is baking, stir the chickpeas with 2 tablespoons of BBQ sauce.
  5. After pizza has baked for 15 minutes (total), remove and top with remaining sauce. Scatter shallots, cherry tomatoes and chickpeas across the top and place it back in the oven for another 10 - 15 minutes. (you can also broil it for 2 - 3 minutes at the end to get everything super crispy, just watch it carefully!)

  1. 1/2 cup tomato sauce
  2. 1 cup shredded goat cheese
  3. Fresh herbs
  4. Red pepper flakes
