quinoa & veggies

This delectable dessert is simple to make, delicious, and loaded with nutrition. Ice cream doesn’t have to be an unhealthy indulgence we feel bad about once we’re finished.

Ingredients 

    Service size 1 portion

  • 1/2 cup quinoa 
  • 2 tbsp. basil, chopped
  • 2 tsp. balsamic vinegar
  • 1/4 cup broccoli
  • 1/4 cup onion
  • 1/4 cup zucchini
  • 1 chopped bell pepper
  • 1 cup canned or baked black beans
  • mixed greens
  • tomatoes

Instructions

  1. Toss quinoa with chopped basil; balsamic vinegar; 1/4 cup onion, zucchini, and broccoli, and bell pepper side (chopped); and rinsed and drained low-sodium canned black beans. 
  2. Serve with mixed greens tossed with tomatoes and lemon juice.
